Fourteen and Counting…..

Our oldest son turned fourteen over the weekend. We ushered in Mitchell’s big day with a party with his 10 best buddies.

When I asked him what he wanted for his celebration he answered, “Pizza, Doritoes, soda pop and basketball.”

Boys are so low maintenance. His sister’s parties when she was younger always turned out to be a seven course catered affair with elaborate decorations!

He did ask for one more thing. His favorite dessert (instead of cake) Boston Grahams. I posted it on my Facebook page. I had people asking for the recipe so here it is….

Boston Grahams

2 3.4 ounce boxes French vanilla instant pudding (NOT cook and serve pudding)

3 1/2 C. whole milk

8 ounces Extra-Creamy Cool Whip, thawed in the fridge

45 graham cracker squares

3 squares unsweetened baking chocolate

3 T. real butter

2 T. corn syrup

1/4 C. water

1 t. real vanilla

4 (more or less) C. powdered sugar

Mix pudding and milk until thickened. Fold in Cool Whip. Lay 15 crackers on the bottom of a 9 x 13 inch pan in five rows of three. Spread with 1/2 the pudding mixture. Place on 15 more crackers. Spread remaining pudding mixture. Top with rest of crackers. In a medium saucepan over low heat, melt chocolate, butter, and corn syrup. Stir in water. Remove from heat, add vanilla and stir in powdered sugar until a smooth frosting results. Pour while still warm over the top. Seal with foil and refrigerate at least 24 hours before serving. Serves 12-15.

  1. sorry this is a “Late” post…i’m behind on all my favorite blogs andy just now catching up!!! Here in southern North Carolina we call this Chocolate Eclair Cake! And my now 27 year old son wants it every year for his birthday too!! We use the french vanilla pudding instead sometimes, and if i’m in a hurry a tub of Betty Crocker milk chocolate icing barely warmed in the microwave is just as good!!! Thanks for your recipes and encouragement!!! I so identify with you and your family.

  2. Oh my gosh, that recipe sounds great! Thank you for sharing. I definatley will be making it. Can’t wait to try it. I have 2 boys and they sure are low maintenance I must say. My sister has 2 girls and just by watching what she has gone through with birthday parties, it’s much more consuming.
