Holidays and food.

They just kinda go together, huh? Pumpkin pie on Thanksgiving. Sm’ores on Memorial Day. Cake with thick icing on your birthday. 17 kinds of Christmas cookies calling you nearly the entire month of December.

Well, today I have a great St. Patrick’s Day recipe for you! Kind of a cleaned up, healthier version of traditional corned beef and cabbage. I’ll post it in a minute.

But now, let me ask you how your week went? Mine was 50/50.

I had four days of travel that included the Hearts at Home conference where chocolate and girlfriends abound and where I was taken out to dinner twice, ate on the road four times and had meals prepared for me four times. YIKES!

I actually did really good for 90% of the weekend, making good choices or simply going without. I did have a “Whew! Its over!” feeling after my last talk (a new one I was nervous about) so to celebrate, I decided to have one handful of the M & M’s that had been beckoning me all weekend from Julie Barnhill’s table right next to me. Unfortunately, one handful turned into four! (sorry Jules :-()

When I returned home, I set about trying to wrap up the weekend, unpack (still not done) and jump back into our busy spring. Todd and the boys had gotten lots of “guy food” while I was gone and I really need to go grocery shopping to restock my pantry with foods that are actually good for me! (Note to self: Guy food and my thighs make a bad match)

Today I feel like I am hitting that restart button again. Still not getting on the scale until April 1st. I’ll decide then if my break up with it was a good move or if I should go back to weighing in weekly like most of you.

Okay, here is the recipe and please check in and let us know how your week went, or if you are new, what your reason for joining us is! Happy St. Pat’s Day!

Cabbage Roll Casserole

1 lb. ground sirloin or turkey

1 onion, chopped

1 t. salt, 1/4 t. pepper & 1/2 t. garlic powder

1 C. Minute Rice (brown or white)

2- 1 lb. cans of chopped tomatoes, undrained

1 1/2 C. V-8 or tomato juice

3 C. chopped cabbage (can use pre-shredded, bagged cabbage to save time)

Brown meat and onions in a non-stick pan sprayed with cooking spray. Add rest of ingredients except cabbage. Place cabbage in a 9 x 13 inch pan. Pour meat mixture over evenly over the top and do not stir. Seal pan with foil. Cook 1 1/2 hours at 325 degrees. If it seems a little dry , add a tiny bit more juice.

Serves 8  Calories: 205  Fat grams: 4

  1. Karen, I thank the Lord for you and your friends here on the website. It was great meeting you Sat. at Hearts at Home. I was so blessed by your American Idol workshop last time around and you truly started me on my journey to freedom from my sin of overeating! It’s neat to know you’re from my hometown area in Michigan and also cool to learn that we share homeschooling in common as well! Thank you for the opportunity to share that I did have a good week as I’m down another 2 pounds. The week prior I was in a plateau with no loss so this was a good boost! I’ve now lost 13 pounds in 7 weeks. We did host my husbands pals for card night last night so I overindulged in the Doritoes way too much but feeling back on track today. Glory be to God!   2. Recommiting on keeping a log of my daily food intake. Up 1 1/2 lbs, so easy to gain the weight but difficult to lose.
    I am trying to redirect and get back on track. Now that the weather is getting nice it’s encouraging to stay committed. Thanks for your comments ladies, they are very helpful.

    Sorry to be checking in late again. The end of the quarter snuck up on me this week so I had to get stuff done at school and also, I’ve been reading a series of books by Wanda Brunstetter. They are really good but I have a hard time putting them down once I start. I read all three books in 4 days. I’m feeling better this week so have been better about getting the exercise in but still need to get back to counting calories. I know it worked before when I really kept track so I’m not sure why it’s so hard to do again. I’m glad for the nicer weather too. My son and I took the dog for a walk Sunday night and I even ran a little! It feels good to be able to wear just a light jacket and not be so bundled up you can’t move! My scale is still being wacko so i’m not really sure what I weigh but know I need to be more careful about calories!

  4. Thank God for a beautiful day!!! My daughter had a slumber party last night and after lunch we went to the park with all the kids to play in the sun. We also celebrated St. Patricks day! :)

    we enjoyed our daughters birthday party and surprisingly ate just the one serving of even cake!!!!!

    My old pants are beginning to fit better again! And while my child was using the wii I weighed and lost 3 lbs. I did move a lot, cleaning, cooking, preparing, shopping, serving, exercising on hike and karate, and taebo.

    Seven more pounds to my first goal. Thank God!
    I liked not weighing myself on my scale. I’ll try waiting a bit more to weigh in again.

  5. I am down 1.3 kilograms this week. I am amazed. This past week has been the unhelathiest I have been in about 3 weeks and yet I have lost the most. I don’t understand my body!! I’ll take it tho! I don’t even think I exercised more than I did last week… maybe God is wanting me to learn about moderation?

  6. I have stayed the same now for several weeks. Guess I’m not really trying as hardas i did in the beginning. I am walking just about daily but I have slacked up on my water. Guess it’s time to get serious about a “restart”. There’s a group in my community starting tomorrow night for a time of weigh in and encouragement/support. Hope this will be an additional help for me. Thanks Karen for the recipe and sharing so much with us.

  7. I weighed myself this morning, and I’ve been on the run all day. I can honestly say that I didn’t bother to check my weight journal, and I cannot remember what I weighed last week, so I don’t know where I stand relatively. I think I’m probably within a pound either way, though. What I do know is that I am really unhappy with my eating behaviors for the last week. And I did not exercise as much as I should have. But I also had a heavy work schedule over the last week. Twelve hour shifts all weekend, and partial days on the days surrounding. It is NOT conducive to exercising when you’re only home long enough to sleep! It’s also not conducive to eating well to have to eat on the road. I started out with good intentions. I ate a healthy breakfast on Saturday, ate my packed lunch at 11 AM b/c that is when I had time to do so, but was still at work at 7 pm and had nothing to eat all that time. I finally got home after 8 pm. My family had been out of town, so there was nothing prepared by them to have for leftovers. So I ended up eating a leftover piece of pizza and making a salad, but I was so famished that I ate a humungous salad and ate too fast. I was practically sick to my stomach by the time my brain told me to stop. But hate to say that Sunday was pretty much a repeat of Saturday. I guess I am a slow learner. However, all that said – I did only eat one piece of pizza on Saturday, and there were three left. I could have chosen to eat all three and no salad, so can I say at least I went with what was better nutritionally even if I did still eat too much?
    Our weather is extraordinarily nice right now. Today was the first day this week, though, that I was able to get outside and exercise in the sun. I walked for 15 minutes in the late morning, and I just got back from a 1 1/2 mile walk (half of it was a fairly steep incline), so I am feeling good about that. Oh – and like Deb V. I have been totally craving salt and sweet these days. I am blaming PMS as I watch the calendar. It seems like such a vicious cycle. Feeling moody and having cravings; give in to cravings and feel moodier and more bloated; then eat more junk; etc. Kimberlee – what interesting fact did you find out about the daily weigh in vs. the monthly weigh in? I’m sorry to hear that your morning sickness is back.
    Oh, and before I forget (sounds like I have ADD today!) I had a Wendy’s chili today. They asked me if I wanted cheese and onions with it. I said yes, thinking I would get a little boost of calcium since I was drinking water. Well, it turned out that instead of just a few sprinkles on the top, the cheese was all through it. That was the first time they ever asked me that, but I will not agree to it again. I think I just took that healthy chili and made it full o’ fat. I should have had skim milk later to get that calcium. I really wanted the bacon blue cheese burger, though. I stood in line dreaming and salivating, but still ordered the chili. I don’t know. Maybe it was a small victory.

    I am up 1 pound this week but I am not very surprised. My eating was awful last week. I was craving salty and sweet all week and I didn’t exercise very often. So this week is a start over for me. I hope everyone has a good week this week.

  9. I heard about WWW at Hearts at Home! I’m down 3 pounds from last week and looking forward to a walk in the sunshine soon. Last night I chose a glass of water over sweets at the Christian Women’s fellowship!!! My goal is to lose 15 pounds. Thank you Karen for having WWW. :) I have my green on!

  10. In order to lose weight I have to be 100% dedicated. I excersice 5-6 days a week, and my eating was so, so. I’m only down 1/4 lb. Which is funny only because I REALLY wanted to lose 1 whole pound to put me under 200, but instead I’m 200 right on the money. I’ve given up sugar (except for my 1 pc of Ghirardelli Intense dark 72% cacao every day) for Lent and have been sticking to that. I didn’t over eat, but didn’t eat the right things. So, still trying to get under 200 this week. My goal for March was 8 lbs and so far only have 3 off, so I’m going to really kick it in gear for 2 weeks and try to get the other 5 off. That September wedding is coming closer, so I have the incentive. Hope you all have a great week and Happy St. Patricks Day! Hope you’ve got your green on!! :)

  11. Karen, I read a really interesting study on daily vs monthly weighing in in the current Prevention, I was surprised by the results.
    Wow, Debbie, that’s great!!
    I keep forgetting to weigh in. :( Every Tues, all day long I tell myself I get to weigh in tomorrow. And then I totally forget. Oh well!
    I am still having probs stomaching healthy foods like fruit & veggies. I am starting to make more dinners again. My ms came back last weekend after a nice 2 week break :( So food is just a hit or miss.
    I’m still hoping to get back to exercise. Miss it.

  12. I have not been doing well. Between February 16 and March 4 I gained two pounds. Could it be all the chocolate I ate during those weeks? I’m not getting on the scale until the first of April. I haven’t been doing well this week. I’ve been at my dad’s and doing a lot of snacking and eating more bread than I normally would. However, I have done more exercising. For the past two days I’ve walked at least one hour each day and tomorrow I will go on a two hour hike with my dad. My legs already hurt!

  13. Down 4 pounds this week. I know full well it is water weight but I’ll still take it. It’s starting to look a little bit like spring where I am so I am anxious to get outside. Everyone have a good week.

  14. Well I have to agree with you Karen, my week was a 50/50 as well. I seem to do fairly well during the week but when it came to the weekends it was no holds barred! I have been doing without unnatural sugar items. (cake, cookies, candy, pop) It has gone fairly well. Only a few times the temptation on a bite got ahold of me! However, this last weekend we visited family and they served us homemade food items. (ya know, pot roast, and a chocolate covered brownie) Don’t want to be rude to family! As of Monday though I’m back to tracking and exercise and 5-6 small meals. Thanks for the recipe Karen, I sure can use it!
