Christmas in July! Pistachio-Cherry Muffins

Christmas Pistachio cherry muffinsIt may be an adapted phrase, “Christmas in July” for sales and marketing of items at the mall, but why not enjoy a yuletide delicious treat this weekend?  Only five months away from today {YIKES!}, Christmas is such an incredible time of year. I thought it would be fun to share a recipe from my book Everyday Confetti to enjoy today, in July. {Who doesn’t like holiday lovin’ from the oven?}

These are as pretty as they are delicious. You could even update your Christmas card address list this weekend while you nibble on your muffins and sip some hot cocoa. You know that December is not the time to go searching for addresses so be ahead of the game!

Christmas Pistachio-Cherry Muffins

1 box white cake mix

1 sm. box instant pistachio pudding mix

1 (10 oz.) jar maraschino cherries, drained, coarsely chopped, and tossed in 1 Tbs. flour

white sugar

Christmas cupcake liners

Mix cake batter according to box directions and add in dry pudding mix. (Do not make the actual pudding, just add the dry mix to the cake mix.) Gently stir in drained cherries. Spoon into muffin tins lined with papers. Sprinkle a little white sugar on top of each. Bake according to box directions for muffins, or just a bit less. Do not over bake.
