Please help me welcome Pie Baker Extraordinaire, Linda Hundt, founder of Sweetie-licious Bakery Cafe in DeWitt, Michigan. Although her 3 bakeries are limited to Michigan at this time, her pies are widely acclaimed around the USA. She is the author of the cookbook Sweetie-licious Pies: Eat Pie, Love Life. 

{Fun fact: Linda and & used to cheerlead for cross-town schools in high school so I recognized her the first time I went in her shop. Now, we’ve become friends as adults. She even let me use her remodeled farm house for a photo shoot recently for an upcoming, top secret project!}

Linda is a sought-after keynote speaker: speaking on faith, dreams, and love, as well as giving pie baking demonstrations for hundreds of people at a time.

She resides in a century-old farmhouse with her sweet husband. The Hundts have two beautiful daughters. Linda believes that Sweetie-licious Bakery Cafe can change the world one pie at a time through good food, good pies and good deeds and if you eat pie, you will inevitably, love life.

918BvbQYpnLAs long as I can remember I have loved to bake.  It was part of my upbringing and I have so many wonderful memories associated with the sights, smells, and tastes of Christmas. Today I am sharing one of my favorite recipes with you.  This is a wonderful cookie that my sweet mommy made all the time, as I know they were her favorite too! To make them a little fresher I have added some lemon zest to the original recipe. The secret to these and all cookies really, is to under bake them! I hope you enjoy making Mom’s Lemon Ginger Balls and making your own “sweet” memories this Christmas!

Mom McComb’s Lemon Ginger Balls

1 C. sugar

¾ C. Crisco shortening

1 egg

¼ C. Blackstrap molasses

2 C. flour

2 tsp. baking soda

1 ¼ tsp. cinnamon

1 ¼ tsp ginger

1 tsp. of lemon zest

Pinch of salt

Cream the sugar and shortening together. Add egg, molasses, and lemon zest in sugar and shortening mixture, mix well. Whisk flour, salt, soda, spices together. Add to other ingredients. Mix together well, but do not over­beat. Roll dough into small balls and roll in sugar, raw or granulated. Bake at 350 degree preheated oven for 8 ­ 11 minutes.

  1. Our favorite pie is the one sitting in front of us!! My husband just bought me your cookbook on pies and last night he made his first pie ever from it!!! It’s the peanut butter coconut banana. He was so excited that he rushed out this morning to buy whipped cream for the topping and now we’re going to make the peanut butter cookies to crumble on top. I bake constantly!!! But l’m so encourage to see my husband start baking! I haven’t been able to bake all that l want for Christmas but hopefully he’ll be able to help me this year. Our favorite Christmas pies are pecan and pumpkin but everyone wants frosted Christmas cookies as well. Thanks so much for creating this wonderful cookbook!

  2. My dad has always liked my apple pie, but I remember a pie my mom made for my birthday – German Chocolate Pie. It was my favorite growing up. I also have fond memories of my aunts Merry Christmas Pie though I don’t have a recipe for it. If anyone does, I’d love to surprise my family with it!

  3. All of my holiday memories have special sweets intertwined in them! One of my favorite memories is the Christmas cake (shaped like a Christmas tree) that was always served at my Great Aunt’s Christmas party. The whole family would gather in her country home that was decorated with several Christmas trees and loads of decorations. We would eat and play games and visit for hours. Such special memories!

  4. My mom has always been a wonderful pie maker. My favorite was the little cinnamon sugar pastries that she made with leftover pie dough!

  5. My husband’s favorite pie is Coconut cream. Well I took it upon myself to spend one spring learning how to make coconut cream pie to the best of my ability. Now it seems that others fade.

  6. I have a son who has a Pi Day birthday. Pie has taken on a new meaning! I”m slowly learning to be a great pie maker!

  7. Can’t wait to try this recipe. My favorite treat from growing up was my moms delicious pecan tarts. They were a lot of work but oh so good! I miss them!

  9. I like any kind of pie, but my favorite has to be with lemon in it! And like to make Swedish Spritz Cookies and Molasses Cookies!

  10. What’s not to love about pie? Cherry pie is my favorite and a tollhouse pie, and buttermilk pie, and peanut butter pie. They are all so very good!!!

  11. My favorite during this season is German stollen, some call it a fruit cake but it really isn’t. It is more like raisin bread but with a mixture of fruit. Mmmmm just thinking about it. I make it every so often, because there is a lot of work that goes into it, but it never tastes like my Mothers.

  12. My daughter makes the best apple pie ever. I do enjoy a good banana or coconut cream pie when I have a choice. Thanks for the giveaway!!
