Simple & Sweet Homemade Granola

Here is a simple yet delicious recipe for something I made in my kitchen recently to send to our daughter who lives in North Carolina. Homemade granola!

Homemade Granola

4 cups old-fashioned oats (not quick-cooking)

1 1/2 cup sliced almonds

1/4 cup honey

1/2 cup packed light brown sugar

1/2 teaspoon salt

1/2 teaspoon ground nutmeg

3/4 teaspoon ground cinnamon

1/3 cup vegetable oil

1 teaspoon vanilla

1 1/2 cups coconut

1 1/2 cup dried cherries or cranberries (I used the pomegranate-flavored ones)

Mix all but cranberries in a large bowl. Place on cookie sheets that have been sprayed with cooking spray. Bake at 250 degrees for 40 minutes or more stirring every 10 minutes until lightly golden. Add cranberries once you’ve removed it from the oven. DO NOT OVER-BAKE!

Cool and package in plastic containers or ziplock bags. Enjoy!!!!

  2. Thank you Karen for this reminder…Even though my children are grown, I still find myself scaling the mountain, only with other “things” that seem to be so important at the time. I come home from a full day at work and look around at what needs to be done and also have a small candle business, so try to cram that in along with everything else. I don’t spend the time with Jesus that I so need. In my mind I try to tell myself I can do it all, but I fall in to bed exhausted and start this craziness all over again the next day. I am so thankful that a friend sent me the link to Proverbs 31, as it has been such a blessing to me. I look forward to the devotional each morning and also have the First 5 app on my phone. Thank you for today’s devotional reading as it really hit home. I desperately need to carve out the time to rest in God and connect with him to replenish my soul. God Bless You!
