This Week’s Fab Five

Typing here as I nurse a horrible chest cold {Prayers appreciated. We are getting ready for our son’s graduation open house next weekend and have soooooo much to do– but I just feel like crawling in bed!}

Anyway~~ here are five things I loved this week at home and around the web. Enjoy!

#5 Last night’s dinner: Lemon-basil Garlicky Chicken. I made it with herbs from my garden. I have both an in-ground herb garden with ones that return year after year {oregano, sage, thyme, chives, edible lavender, etc} and then some planted in pots on my steps.

Here is the recipe. It was yummy! I served it with roasted asparagus and salad but it would be yummy with rice pilaf or potatoes.

Lemon-Basil Garlicky Chicken

6-8 boneless, skinless chicken breasts

1/4 C olive oil

2 T fresh lemon juice

1/2 t. salt

1/4 t. lemon pepper

1 t. fresh minced garlic { if you use powdered I’d guess 1/4 t}

1 t. fresh minced oregano {1/4 t dried}

2 t. fresh minced lemon basil or sweet basil { or  1/2 t. dried basil}

1/2 C crumbled feta cheese

3 or 4 thin lemon slices

Mix oil, juice and spices. Place half the chicken breasts in a crock pot and pout half the oil mixture over. Place remaining chicken in and top with remaining oil mixture. Top with lemon slices and sprinkle with feta chesse. Bake 4-6 hours on low (mine took 5 hours in a small crock pot. It may take longer in a large one)

#4 Seeing my clematis start to bloom. This is a variety that begins blooming in May and goes until the end of September! I don’t remember the exact name but it has “Jack” in the title.

#3 A book I am reading for review/endorsement. From the fabulous Courtney Joseph of Women Living Well. {Well….I actually read the manuscript before she turned it in but WHAT FUN to see it on the printed page!!!}

#2 My FAVORITE post EVER by our Proverbs 31 President Lysa TerKeurst! She was guest posting over at sweet Ann Voskamp’s place. I got a sneak peek at the post the day before it went live and told Lysa it was the best she’d ever written. She may have thought I was just being kind. However 47,000 Facebook shares later, I think she can believe what I said!!! If you are a mama who has ever felt discouraged because of a choice of one of your children {and what mama hasn’t?} you will be so encouraged!! To read it, click here.

Art & Lysa with Todd & me last Sunday. We got to go with them to church and out to lunch and talk UNINTERRUPTED! Well, a few of the kids interrupted– but only once or twice ;-)

#1 And finally……Graduation for our second child Mitchell!!!!  A few pics now, the story of his journey later. :)

  3. Thank you, Karen. I am lifting you up in prayer as well. Sometimes we need to rest our bodies and I pray that you are on the mend in time for your son’s open house.

  4. Karen, prayers that you are well for next weekend. I have spent the past week suffering with the same thing…….courtesy of my loving husband. Congrats to your son and his loving parents. It’s not easy getting them this far but …..oh………where did the time go? I have graduated 3 and they are all married and have kids and I think back and am amazed at what transpired to get them all to this place.

    My clematis are blooming, too. I have one just like yours and two others.

    The chicken sounds yummy and am going to print off the recipe. I have lots of fresh asparagus right now……..perfect!

    Can’t wait to get a look at the Women Living Well book…….I get the email updates from the blog.

  5. That cake is amazing, as is the party theme. My son is a freshman but I am printing these for the future!!
