We’re a very busy family, as most of you are. December is a particularly frazzled time with jewelry orders, normal Holiday craziness, and 2/3 of our children’s birthdays. So I love an easy recipe to put together for parties!

Hot Spinach Artichoke dip is just that. It’s extremely forgiving so use my recipe just as a loose guideline. It gets rave reviews every time I take it somewhere!

Ingredients: 1 cup sour cream

1 block cream cheese

1 cup mayonnaise

1 cup parmesan cheese

1 cup mozzarella cheese

1 can artichoke hearts, chopped

10 oz. package of frozen spinach

salt, pepper, garlic, and seasoning salt (we like Cavender’s)

bacon bits (optional, but oh so good)

In a microwaveable bowl or on the stove top, melt cream cheese. Stir in all other ingredients and heat through. Season to taste. (taste testing is required! You know you’ll do it anyway…) If it’s too thick, add another spoonful of mayonnaise or even a splash of milk. If it’s too thin, add more cheese.  Serve hot with crackers, fresh veggies, pretzels, etc.

The next 12 days of Christmas we will be attending our children’s Christmas play at church, (our daughter is in it) we will be baking, going to Bethlehem Town at the Creation Museum, traveling to my in laws to celebrate, shopping for a little girl we plan to bless and making lots of memories!! I try very hard to get all the shopping and tedious things done before my daughter is on school break so that we can do lots of fun things. Ice skating, snow tubing and this year we are gonna go skiing.

  2. Well, I’m pretty much ready for Christmas now. A friend came over for a mince pie and to wrap prezzies last night. I’m going to enjoy the next 12 days I hope, especially going out for Christmas dinner with friends on Tuesday, and my mum is waiting for some test-results, so I’m hoping she’ll find those out before Christmas.

  4. First off, morning quiet time, every day, no exceptions, or the crazy business will take over! Christmas production at church, regular Sunday activities, a low key birthday, basketball games (hubby is AD), making and baking a gifts for school staff (hubby is also Vice Principal), preparing items for two school-age kids parties, staff Christmas party, packing for a 13 day trip to visit family, wrapping my children’s gifts, working M-F afternoon at the school… All in the next seven days before vacation and a bit of slow down time.

  5. We have a tradition of rolling behest balls and sausage balls. I’m also putting together some Christmas Eve games.

  6. One more week of work, than wrapping and trying to enjoy the season. I want to drive around at night and look at Christmas lights!

  7. Sounds like a delicious recipe Beki – love your jewelry! The next 12 days of Christmas will be busy! My 9 year old daughter is in two showings of the Nutcracker tomorrow and has her 10th birthday on Thursday! In addition I still have shopping and baking to do and some Christmas lights left to hang!

  8. We are waiting for my our daughter to get home from CO., then we’ll decorate the tree, bake cookies, and have family over for breakfast and games!

  9. So excited to try your recipe! :) My daughter will be so happy!! The next 12 days are going to be way too busy; I still have everything Christmas to do, as well as an already over scheduled “regular” life! I have to keep reminding myself that all of it is a blessing.

  10. After this weekend, I am planning to steadily get the last minute things done in preparation for a smooth and happy Christmas. Finkshing with cookies, then will wrap, and plan menus and maybe food. I will keep this recipe and may use it too. Thanks for the great tips from these last 12 days. It has been awesome!

    These 12 days of Christmas to come are filled with a whirlwind of tasks. Most of all spending time with friends and family.

  12. Oh, I love hot spinach artichoke dip. Never tried making it myself. Going to try this yes this month! For the next few days…shopping is done until next payday. (i so dislike waiting until so soon before Christmas, but it is what it is). Most of my shopping is done, so that helps. tomorrow is the busiest with a youth gathering, church dinner and dessert /games after. baking tonight for it. the next few days will be not much different than now. Finishing up decorating, teaching, Bible study. But…I also want to start reading A Christmas Carol to the kids. We’ve not begun any Advent reading this year, like in the past. Hoping it will be a fairly quiet next 12 days. What a great giveaway. The jewelry is beautiful.

  13. It is a homemade Christmas this year, so will be spending time finishing up the gifts. Kids and I also want to make some new salt dough ornaments for the tree. Just relaxing, reading together, watching Christmas movies together. Enjoying the season.

  14. I will be spending portions of the first two days of the next 12 at our daughter’s horse show. Then I will spend five days working. Sometime in these seven days I need to do some decorating, figure out gift shopping lists, and actually do the shopping. I don’t know how I’d get the shopping portion done without Amazon! ???? Then there will be the wrapping and any cooking needed for Christmas Eve at my brother’s home. And somewhere in there plans for getting together with my brother-in-law’s family will need to be figured out and ultimately take place. There’s a part of my brain that is about to hit panic mode. Fortunately there’s a bigger part of my brain that is calmer and at least a bit more rational. Decorating may be less than previous years, presents will be fewer to better emphasize the real meaning of the season, and peace can reign more fully. This is my plan at the moment, sitting in front of a fire. We’ll see what tomorrow brings.

  15. i will be preparing for Christmas in the next 12 days. Tomorrow our family will be putting up our Christmas tree and decking our house for the holiday season. I also have baking, present buying, and card writing a mailing left to do.
