Hi Friends, Clare here. A lot of you are looking for snacks and meals that are healthy that you can eat during the summer. What I define as “good food” to eat during the summer includes minimal prep in the kitchen, no hot ovens or crockpots, and lots of fresh, in-season foods!

Our kids are home with us too so we have to be mindful of them as well. Here are some of my favorite clean meals and snacks our family eats during the summer!

1.) Foil Packet Dinners

Fire up your grill! Get foil out and grease using whatever oil you prefer. Place your protein of choice on the foil, season it with salt, pepper, garlic, or whatever you prefer. Then add your favorite veggies and some sliced potatoes.

2.) A “Loaded” Salad

Nothing like a salad that’s topped with a great piece of protein, some healthy nuts, and fruit. Choose your protein, (chicken or steak is my favorite), season and grill and then build a great salad! Think about what your favorite salad bars have and mimic those items. I love pistachios, almonds, dates, craisins, hard boiled eggs, feta cheese, apples, strawberries, avocado, mangoes…etc.

3.) Naked Burgers

Who says you can’t have a burger?! I put it on a bed of lettuce and top with a avocado and sometimes bacon. I also love ground chicken and turkey for burgers. Serve with a side of sweet potatoe fries or wedges (homemade, of course!)

4.) Grilled Bowls

I’m a fan of bowls. They are kind of like the upscale version of a casserole. Haha! I follow similar patterns as above–choose a lean protein (grilled), then grill up some veggies (zucchini, peppers, etc) and add to a bed of rice, quinoa, or even sweet potatoes (or regular potatoes)! Go with a Mexican twist and mimic your favorite bowl from Chipotle!

5.) Smoothie Pops

Smoothie pops are a great option for kids when they are hot and need a healthy snack. (Us adults love them too!) You have a lot of flexibility here so have fun with it. Here is one of my favorite recipes.

6.) Apple Nachos

These are a tiny bit labor intensive, but totally worth it. Get the kiddos in the kitchen to help you slice and top them!
