5-Ingredient White Bean Chicken Chili for #LoveYourLifeFriday

This Clean Eating White Chicken Chili is made with just 5 ingredients, and is Dairy Free. It can be made on the stove top in less than 30 minutes, or in your slow cooker, so you can set and forget it.

Not only is this chili one of the easiest you will ever make, it is bursting with rich flavor that is sure to warm you up on a chilly day!

Ingredients:

1/2 cup Chicken broth

1.25 lb Chicken breast

3 (15-oz) cans Great Northern beans, drained

1 (16 oz) jar Salsa verde

2 tsp Ground cumin

1 tbs Oregano (optional)

1/2 cup Plain greek yogurt (optional)

Instructions:

Stovetop Method: Add everything to a large pot and stir to combine. Heat over medium-high heat until boiling, then cover and reduce heat to medium-low and simmer for at least 25-30 minutes to allow chicken to cook through. Shred chicken with two forks and stir to combine. Stir in greek yogurt if desired. Serve warm with desired toppings.

Slow Cooker Method: Add everything to the slow cooker, and stir to combine. Cook on low for 6-8 hours, or high for 3-4 hours until the chicken is cooked through and shreds easily with a fork. Shred the chicken in the crockpot after cooking and stir in greek yogurt if desired. Serve warm with desired toppings.

Servings: 6 (1 cup per serving)

  1. I meant to leave a comment sooner than this. My apartment building was having a chili cook-off on October 31. I wasn’t planning on making any chili because I would have had to get someone else to brown my hamberger for me. I never thought about using chicken. The day after I saw this recipe my sister was going to visit me so I had her take me shopping for the ingredients so I could make this chili. It turned out quite well and I won third place at our cook-off. People enjoyed this chili so I’ll be making it again.
